
Ingredients
1/2 cup cumin seeds
3 tbsp coriander seeds
2 tbsp black peppercorns
2 tbsp ground turmeric
12 green cardamom pods
6 black cardamom pods
6 bay leaves
6 whole star anise
4 cinnamon sticks
1/2 nutmeg seed
1/2 tsp mace
Method
– Toast spices (except nutmeg and turmeric) in a skillet over medium heat, until fragrant, shaking sporadically.
– Let cool, grind spices in an electric spice grinder to a medium coarse powder, add turmeric and nutmeg and mix.
– Store in an airtight container.
